This late breakfast or light dessert dish originated in New York. It is usually served at late breakfast with bacon or toast as a special fall treat and is an annual menu favourite at the stately Genesee Country Inn, Mumford New York.
Yield: Serves 4.
Preheat oven to 425 degrees F. Melt the butter in a skillet, then sauté the apple slices with the 3 tablespoons granulated sugar and lemon peel for about 5 minutes or until tender. Turn into a buttered, 9-inch square baking dish. Blend the eggs, milk, flour, 1-1/2 tablespoons granulated sugar, vanilla, and nutmeg and pour mixture over the apples. Bake 10 minutes. Sift the confectioners' sugar over the top. Bake 10 minutes or until the puff is set and golden brown. Serve immediately.
