Exciting new product in the market this week. Belgian Endive (whitloof chickory) is grown in Abbotsford by Van Eekelen Enterprises, one of only two growers in Canada.
Should be some Okanagan fruit, hopefully both peaches and apricots in the market this week.

We’ve been noticing the selection of beets in the market the last few weeks. Seems like a good excuse to dig out a couple recipes for using this antioxidant and anti-inflammatory rich edible tap root.
Slow Cooker Roasted Beets
These "roasted" beets are so easy to cook in the slow cooker. Scrub the beets, wrap in foil with a tiny bit of olive oil, toss them in the slow cooker, and select High!
Trim the beets, leaving about 1 inches of the tops on and rootlets intact.
Place each beet on a square of foil and drizzle with about 1/2 teaspoon of olive oil. Bring the corners of the foil up around the beets and twist to seal. Repeat with the remaining beets.
Put the wrapped beets in the slow cooker, cover, and cook on HIGH for 3 to 4 hours, or until the beets are tender.
